Twice Baked Potatoes

Twice Baked Potatoes, Mashed Style

6 small potatoes (4 medium potatoes)
1 stick of butter
1/2 C Sour Cream
4 oz Cream Cheese
Garlic Salt to taste
1 C Shredded Cheese

Boil potatoes then mash. With a mixer, add 3/4 of butter, sour cream, cream cheese and garlic salt until smooth. Put mixer in 2 quart casserole dish. Spread remaining butter on top of mixture and sprinkle with cheese. Cook 350 degrees for 20 minutes or until potatoes are hot. Serves 4 to 6.

Optional:
*** Instead of using Garlic Salt to taste, add 1/2 a packet of dry Ranch Dressing.
*** Also, if you don't like that much of a sour cream taste, substitute with milk. Just make it a creamy texture like regular mashed potatoes.

Strawberry Banana Fruit Salad

This is the salad I made for this last Easter. Here is the recipe that I got from Big Dave.

Strawberry Banana Fruit Salad

In a medium pan, cook 2 cups of sugar, 2 cups of water and 3 tbsp of cornstartch until clear in color, bubbling and a little thick. Add 1 cap (about 1 tsp) of Almond flavor and remove from heat. Let mixture cool to room temperature.

Once mixture is cool, pour over about 1 carton of strawberries, sliced, and 3 bananas, sliced.

Refrigerate. You can eat it after you make it or when its super cold. Either is way yummy!

Grandma Stewart's Banana Nut Bread

In the process of cleaning out my e-mail, I decided to put this on here so I don't loose it. I print this recipe probably everytime I cook it since mine gets hammered as I make this yummy bread.

Banana Nut Bread
1 C Shortening or Margarine
2 C Sugar
4 Eggs, well beaten
6 Bananas, mashed to a pulp
4 C Flour
2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
6 Tbsp Milk (more if bananas are small)
1 Tbsp Vanilla
1 C nuts, chopped (I use walnuts)

Cream shortening and sugar together. Add eggs, bananas and vanilla. Mix well. Add flour, soda, baking powder and salt alternately with milk. Fold in nuts. Pour batter into 2 loaf pans (9x5x3 inch) that were greased and floured. Bake at 376 degrees for 15 minutes. Reduce heat to 350 and bake for 1 hour. Test for doneness with a toothpick. Romove from pans when partly cooled. Store in tight container or wrap in foil. Best when sliced the next day. Can be frozen when wrapped in foil.

Label Name Change

There is a website that I use for slow cooker recipes. I went on there today to find out that the website is being sued for using the name Crock Pot. The website seemed pretty harmless. Just a bunch of friends putting recipes on a site. I changed the name of Crock Pot recipes on this website to Slow Cooker. I doubt we would have problems, but who knows. What is this world coming too?!?!

Chicken Alfredo (Jennifer)

This recipe is really yummy. Very similar to the Olive Garden's recipe.

Chicken Alfredo

1 pint Whipping Cream
1 stick Butter/Margarine
2 Tbsp Cream Cheese
3/4 Cup Parmessan Cheese
1 tsp Garlic Powder
1 lb Chicken, cooked and shredded

Combine whipping cream, butter and cream cheese. Cook until melted. Add parmessan cheese, garlic powder and chicken. Simmer on low for 15 to 20 minutes. Serve over cooked noodles.

Beef and Bean Taco Casserole (Sondra)

I made this for dinner the other night. It was really good. It's kind of like a taco salad. I didn't really care for the chips on the bottom, they get soggy. I would rather have them on top or spoon the meat mixture over the chips on my plate. Also, instead of Refried beans I substituted 1 can of Kidney beans.


Beef and Bean Taco Casserole
1 Lb. lean ground beef

1 can (16 oz) refried beans

1 jar thick and chunky salsa

1 pkg. taco seasoning

2 1/2 c. coarsely broken, Doritos Nacho Cheese chips

1/2 medium green bell pepper, chopped

4 medium green onions, sliced

2 medium tomatoes, chopped

1 cup shredded cheddar or Monterrey jack cheese, grated

1/4 cup sliced olives

1 cup shredded lettuce


Heat oven to 350*F. In skillet brown the beef, drain. Stir in refried beans, salsa and taco seasoning mix. Reduce heat to medium. Heat to boiling, stirring occasionally. In ungreased 2-quart casserole , place 2 cups of broken chips on the bottom. Top evenly with beef mixture. Sprinkle with cheese, bell pepper, green onions, 1 cup of tomatoes, and olives.Bake uncovered 20-30 minutes or until hot and bubbly and cheese is melted. Top baked casserole with lettuce, remaining 1/2 cup tomato and remaining 1/2 cup chips.

Dutch Apple Salad (Jennifer)

I actually got this recipe from Rachelle, but I love it. It was a huge hit at Thanksgiving and at Jeramy's family parties. I forgot I had it until I was going through some of my recipes.

Dutch Apple Salad

2 large Red Apples
2 large Golden Apples
1 cup of red, seedless grapes
1/2 cup of chopped walnuts
1-2 cups of Vanilla Yogurt

Cut apples into bite size pieces (make sure you take out the seeds). Slice grapes in half. Place both apples and grapes in bowl. Drizzle and mix with the Vanilla Yogurt (can use fat free yogurt for a healthier salad). Sprinkle the top with the walnuts.

Very yummy, simple and healthy salad!
