Twice Baked Potatoes, Mashed Style
6 small potatoes (4 medium potatoes)
1 stick of butter
1/2 C Sour Cream
4 oz Cream Cheese
Garlic Salt to taste
1 C Shredded Cheese
Boil potatoes then mash. With a mixer, add 3/4 of butter, sour cream, cream cheese and garlic salt until smooth. Put mixer in 2 quart casserole dish. Spread remaining butter on top of mixture and sprinkle with cheese. Cook 350 degrees for 20 minutes or until potatoes are hot. Serves 4 to 6.
Optional:
*** Instead of using Garlic Salt to taste, add 1/2 a packet of dry Ranch Dressing.
*** Also, if you don't like that much of a sour cream taste, substitute with milk. Just make it a creamy texture like regular mashed potatoes.

Strawberry Banana Fruit Salad
This is the salad I made for this last Easter. Here is the recipe that I got from Big Dave.
Strawberry Banana Fruit Salad
In a medium pan, cook 2 cups of sugar, 2 cups of water and 3 tbsp of cornstartch until clear in color, bubbling and a little thick. Add 1 cap (about 1 tsp) of Almond flavor and remove from heat. Let mixture cool to room temperature.
Once mixture is cool, pour over about 1 carton of strawberries, sliced, and 3 bananas, sliced.
Refrigerate. You can eat it after you make it or when its super cold. Either is way yummy!

Grandma Stewart's Banana Nut Bread
In the process of cleaning out my e-mail, I decided to put this on here so I don't loose it. I print this recipe probably everytime I cook it since mine gets hammered as I make this yummy bread.
Banana Nut Bread
1 C Shortening or Margarine
2 C Sugar
4 Eggs, well beaten
6 Bananas, mashed to a pulp
4 C Flour
2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
6 Tbsp Milk (more if bananas are small)
1 Tbsp Vanilla
1 C nuts, chopped (I use walnuts)
Cream shortening and sugar together. Add eggs, bananas and vanilla. Mix well. Add flour, soda, baking powder and salt alternately with milk. Fold in nuts. Pour batter into 2 loaf pans (9x5x3 inch) that were greased and floured. Bake at 376 degrees for 15 minutes. Reduce heat to 350 and bake for 1 hour. Test for doneness with a toothpick. Romove from pans when partly cooled. Store in tight container or wrap in foil. Best when sliced the next day. Can be frozen when wrapped in foil.
